Appe is quite the exotic blend of two dishes.
This combines protein-rich ingredients to present a breakfast variant with a delicious twist. If you love the South Indian Adai and kuzhipaniyaram,you’re sure to love the Appe.

Appe or paddu is another traditional element of South Indian cooking – to be specific, it is a popular breakfast dish from the Konkan regions in the west coast. It contains the world of goodness from the five different pulses, veggies and rice. The choice of brown rice ups the health factor by a few notches.

Here is the recipe to make authentic appes, which are sure to bring back memories of grandma’s culinary skills!

Preparation steps

There are two ways of preparing this dish:

Method 1

  1. Clean, wash and soak the 5 pulses and brown rice overnight.
  2. Next day, add the pulses with the rice to a grinder and blend to a smooth paste.
  3. Add the chillies, kadipatta, jeera, methi dana, haldi, hing, sooji, onion and palak or carrot.
  4. Heat the Appe mould on a medium flame and grease it lightly with oil.
  5. Pour a spoonful of the batter into each mould and cook it till it turns golden brown.
  6. Turn over the appe’s and cook it till both sides are golden brown.
  7. Repeat with the remaining batter to make more appe’s.
  8. Serve hot with ketchup for kids and coconut chutney or tomato chutney for adults.

Method 2

  1. Clean, wash and soak the 5 pulses and brown rice for a minimum of 2 hours at least.
  2. Add the pulses with the rice to a grinder and blend to a smooth paste and leave for fermenting overnight.
  3. Heat the kadhai, with 2 tbsp oil. Add the peanuts and onion, sauté on a low flame for a few minutes.
  4. Add the mustard seeds, jeera, green chillies, curry leaves, hing and mix well, once it starts crackling and it to the batter.
  5. Add the salt and a little water if required and mix well to a thick batter.
  6. Heat the appe mould on a medium flame and grease it lightly with oil.
  7. Pour a spoonful of the batter into each mould and cook till it turns golden brown from both sides.
  8. Repeat with the remaining batter to make more appes.
  9. Serve hot with ketchup for kids and coconut chutney or tomato chutney for adults.
